I hate to admit that I didn’t invent this. If you live in Toronto and love anything dill pickle, you’re probably familiar with Burdock Brewery’s Dill Pickle Seltzer. It’s a refreshing, slightly savoury beverage that uses fermented pickle juice from Alchemy Pickle Company - another amazing local brand!
I was selling the Dill Pickle Soda at my shop, Phancy’s Bodega, but we sold out of the limited run very quickly, and as I was making my Dill Pickle Braised Beans recipe I realized I had all of the supplies to make my own.
This is not a drink that tastes like a pickle. It’s a savoury, acidic, refreshing bubbly drink, so even if you’re not pickle crazy I recommend trying it out! Plus fermented pickle brine is good for your gut. Add some vodka if you wish! Go wild.
Dill Pickle Soda - 1 Drink:
1oz fermented pickle juice, or more if you’d like
2 tsp lemon juice
2.5 oz soda water
Pickle & lime for garnish (optional)
Ice
Fill a double rocks glass with ice. Add the pickle and lemon juice, then top with soda water. Garnish with a pickle spear and lime if you wish!
